Au lieu-dit Le Bourda, en Gascogne, le Domaine de l\u2019Airial s\u2019inscrit dans un paysage typique du Gers.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t

\n\t\t\t\t\t\t\t\t\t

Il faut quitter la route et traverser un paysage de haies, de prairies et de parcelles de vigne pour atteindre la propri\u00e9t\u00e9. Au d\u00e9tour du chemin apparaissent une maison gasconne et un chai ancien, aujourd\u2019hui d\u00e9di\u00e9 \u00e0 la production des vinaigres du Domaine.<\/p>

C\u2019est ici que C\u00e9cile cultive ses raisins et \u00e9labore ses vinaigres, dans un lieu pens\u00e9 pour r\u00e9unir en un m\u00eame endroit la vigne, la production et l\u2019accueil des visiteurs.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

Un domaine au c\u0153ur de la Gascogne\u00a0<\/h2>\t\t\t\t<\/div>\n\t\t\t\t

Le Domaine de l\u2019Airial se situe \u00e0 Lagraulet-du-Gers, au c\u0153ur de la T\u00e9nar\u00e8ze, dans un territoire historiquement marqu\u00e9 par la vigne et l\u2019Armagnac.<\/p>

La propri\u00e9t\u00e9 s\u2019\u00e9tend aujourd\u2019hui sur plusieurs dizaines d\u2019hectares compos\u00e9s de vignes, de prairies, de bois et de haies bocag\u00e8res.<\/p>

Les b\u00e2timents du domaine t\u00e9moignent de cette histoire agricole : une maison gasconne traditionnelle et deux chais anciens, aujourd\u2019hui restaur\u00e9s pour accueillir les espaces de transformation et d\u2019\u00e9levage.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

Un projet agricole singulier\u00a0<\/h2>\t\t\t\t<\/div>\n\t\t\t\t

Le Domaine de l\u2019Airial n\u2019est pas une simple vinaigrerie.<\/p>

Il s\u2019agit avant tout d\u2019une exploitation agricole o\u00f9 les raisins sont cultiv\u00e9s, vinifi\u00e9s puis transform\u00e9s en vinaigre sur place avant un long \u00e9levage en barriques.<\/p>

Cette organisation permet de conserver une coh\u00e9rence compl\u00e8te entre la vigne et le produit final, et de produire des vinaigres \u00e9troitement li\u00e9s \u00e0 leur origine.<\/p>

Le Domaine s\u2019est construit progressivement, au rythme des plantations, des restaurations et des premi\u00e8res mises en production.<\/p>

Un projet men\u00e9 avec patience, dans un lieu o\u00f9 le temps joue un r\u00f4le essentiel.

L\u2019histoire de C\u00e9cile\u00a0<\/h2>\t\t\t\t<\/div>\n\t\t\t\t

\u00c0 l\u2019origine du Domaine de l\u2019Airial, il y a le parcours de C\u00e9cile.<\/p>

Issue d\u2019une famille d\u2019entrepreneurs, elle a longtemps \u00e9volu\u00e9 dans un tout autre univers professionnel avant de se tourner vers l\u2019agriculture.<\/p>

Install\u00e9e dans le Gers, au c\u0153ur d\u2019un territoire viticole, elle imagine progressivement un projet singulier\u00a0: produire des vinaigres artisanaux \u00e0 partir des raisins cultiv\u00e9s sur son propre domaine.<\/p>

Le projet prend forme au d\u00e9but des ann\u00e9es 2010. Essais, recherches, formation agricole, achat d\u2019une propri\u00e9t\u00e9 \u00e0 restaurer et plantation des premi\u00e8res vignes\u00a0: plusieurs ann\u00e9es seront n\u00e9cessaires avant que les premi\u00e8res cuv\u00e9es puissent \u00eatre commercialis\u00e9es.<\/p>

Aujourd\u2019hui, C\u00e9cile conduit le Domaine avec la m\u00eame exigence\u00a0: observer, exp\u00e9rimenter et laisser au temps la place n\u00e9cessaire.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

Les vignes occupent une place centrale dans le projet.
Elles fournissent les raisins qui serviront \u00e0 \u00e9laborer les vins puis les vinaigres du Domaine.<\/p>

Plant\u00e9es principalement en Petit Manseng et Gros Manseng, deux c\u00e9pages embl\u00e9matiques du Sud-Ouest, elles s\u2019inscrivent dans un paysage de parcelles entour\u00e9es de haies et de prairies.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t

Ces b\u00e2timents anciens ont \u00e9t\u00e9 restaur\u00e9s pour accueillir les diff\u00e9rentes \u00e9tapes d\u2019\u00e9laboration et d\u2019\u00e9levage des vinaigres.
